Will I still have sufficient capacity of hot water even if the heat pump or booster heater doesn’t switch to hot water mode immediately?

Yes, Daikin Altherma is not based on instant water heating like a gas boiler. The tank has a storage volume of 150-300 litres of hot water which will cover the load whilst the system switches to hot water mode.
